Hellim Cheese

Hellim cheese, also called Halloumi, comes from Cyprus. It is made of goat's milk, salt, and sometimes a hint of mint.

Hellim has a texture like mozzerella cheese or firm tofu. It has a very high melting point so it can be grilled without oozing everywhere.

Our Turkish Pizza had chunks of Hellim cheese which gave it a nice, salty flavor.
