Falafel is a traditional dish from the Middle East. Falafel is shaped into a small cake or patty made of mashed chickpeas or bean flour. Chickpeas, also known as garbanzo beans, belong to the legume family. Found throughout Asia, the Middle East, Greece, and Italy, they are one of the oldest cultivated vegetables in the world. Peas, beans, alfalfa, lentils, and peanuts are all a part of the legume family. Falafel is a great source of protein and can be served as balls or stuffed inside a pita bread pocket. Sometimes it’s served with tahini sauce, which is sesame paste mixed with water and lemon.
